Will it only show jobs I have done before?
No. It scores jobs against what your resume shows, and says in words which of your skills carry over and which gaps the posting names.
Will employers know I used it?
The application arrives through the employer's own form, like any other. What you send is your responsibility, so drafted answers are marked for you to check.
Will it apply to jobs without me?
Not unless you turn on Autopilot (Pro). Even then it sends only forms where every question is answered and nothing that matters was drafted by AI, waits 10 seconds so you can Undo, and stops for captchas, sign-ins and questions it does not know.
